Ingredients
- 1 tbsp vegetable oil
- 8 Cumberland sausages, cut into bite-size pieces
- 350g tomato pasta sauce
- 800g gnocchi
- 100g freshly grated Parmesan, plus shavings to serve
Directions
-
Heat the oil in a large deep, frying pan over a high heat. Add the sausages and cook for a few minutes, stirring occasionally, to brown all over. Tip the sausages into a sieve over a bowl to catch any excess fat, then return to the pan.
-
Reduce the heat slightly and add the pasta sauce. Add a jarful of water. Simmer for 5 minutes, stirring occasionally. Meanwhile, cook the gnocchi in boiling, salted water for 2 minutes. Drain and stir into the sausage mixture, along with the Parmesan. Season with black pepper, divide between bowls and serve with extra Parmesan shavings.
