Coconut Macaroons

Ingredients
- 3 egg whites
- 1 1/2 C castor sugar
- 1/2 t vanilla or raspberry essence
- 1 1/2 C dessicated coconut
Directions

Beat egg whites until soft peaks form.

Add castor sugar – 1/2 cup at a time, beating until glossy and sugar has dissolved.

Fold through essence, and coconut – 1/2 cup at a time.

Spoon onto paper lined tray, spoon size according to your tase.

Bake at 180oC approx 15 minutes.

Remove from paper immediately.

Cool and store in airtight container.
