Macarons

Gluten and dairy free

Cook time: 12 minutes
Serves 15 people

Ingredients
- 2 large eggs, whites only
- 3/4 C ground almond meal
- 2/3 C icing sugar
- 3 1/2 T granulated sugar
- food colouring if desired
Directions

Process ground almonds and icing sugar 30 – 60 seconds, to combine.

Whisk egg whites until frothy, then increase speed and beat until soft peaks form (approx 2 minutes).

Gradually beat in granulated sugar, and beat until stiff peaks form.

Add food colouring if using.

Fold in half almond/sugar mixture, sift remainder and mix in.

Pipe onto paper-lined tray, let stand 15-30 minutes.

Bake in pre-heated oven at 180oC for 11-12 minutes, rotating pan halfway through cooking.

Fill when cold.

Best left 24 hours before eating.
