Macarons

Gluten and dairy free

Cook time: 12 minutes
Serves 15 people

Ingredients

  • 2 large eggs, whites only
  • 3/4 C ground almond meal
  • 2/3 C icing sugar
  • 3 1/2 T granulated sugar
  • food colouring if desired

Directions

  1. Process ground almonds and icing sugar 30 – 60 seconds, to combine.

  2. Whisk egg whites until frothy, then increase speed and beat until soft peaks form (approx 2 minutes).

  3. Gradually beat in granulated sugar, and beat until stiff peaks form.

  4. Add food colouring if using.

  5. Fold in half almond/sugar mixture, sift remainder and mix in.

  6. Pipe onto paper-lined tray, let stand 15-30 minutes.

  7. Bake in pre-heated oven at 180oC for 11-12 minutes, rotating pan halfway through cooking.

  8. Fill when cold.

  9. Best left 24 hours before eating.
