Cinnamon Maple Pecan Milk

Good stuff – very festive! I drank it straight, but the authors say it’s also decent with Maple Cinnamon Buckwheat Crispies cereal (p. 272).

Ingredients

  • 1 c. pecans (raw), soaked 2 h. or more
  • 3.5 c. spring (or filtered) water
  • 1/4 c. maple syrup
  • 2 Tbsp. coconut butter (opt.)
  • 2 tsp. vanilla extract
  • 1 Tbsp. lecithin (opt.)
  • 2 packets stevia, or an additional 2 Tbsp. maple syrup
  • 3/4 tsp. ground cinnamon
  • pinch of nutmeg, freshly grated
  • pinch of sea salt

Directions

  1. In a Vita-Mix or high-speed blender, blend the nuts and water on high speed for about 2 minutes.

  2. Add the remaining ingredients and blend to combine. Taste for sweetness.
