Southwest Green Rice

Original recipe was double this but made too much.

Ingredients
- 1 1/2 T. butter
- 1/2 cup chopped onion
- 1 garlic clove, minced
- 1 cup uncooked rice
- 6-8 oz. canned tomatillos, drained
- 2 oz. canned chopped green chiles
- 15 oz. chicken broth
- 2 T. chopped fresh cilantro
Directions

Melt butter in large saucepan or skillet over medium heat.

Add onion and garlic. Cook 3-5 min. or until onion is softened, stirring occasionally.

Add all remaining ingredients except cilantro. Mix well.

Bring to a boil, stirring occasionally. Reduce heat to low, cover and simmer 20-25 minutes or until liquid is absorbed and rice is tender, stirring occasionally.

Remove from heath and stir in cilantro.
