Ingredients
- 6 eggs
- 1 c sugar
- 3/4 c vegetable oil
- 3 c all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp vanilla (optional)
- 1/2 tsp anise extract (optional)
Directions

In a large bowl, whisk together the eggs, sugar, and oil.

Mix thoroughly.

Add the flour, baking powder, and optional flavorings.

Mix well to form a homogenous batter.

Set aside at room temperature for 30 minutes.

Oil pizzelle iron thoroughly before heating.

Heat a pizzelle iron until very hot (ca. 5 min.).

Pour 2 tbsp batter onto the iron, close, and return to heat.

Cook until golden brown (30 sec – 2 min depending on the iron).

Repeat until batter is used up.
