Ingredients

  • 1.5 # ground beef or turkey
  • 1 C chopped onion
  • 16 oz can diced tomatoes
  • 6 oz can tomato paste
  • 1 t salt
  • 1/4 t dried thyme, crushed
  • 7oz. elbow macaroni
  • 4 slightly beaten egg whites
  • 2 oz feta
  • 1/2 c butter
  • 1/2 c flour
  • 1 t salt (again)
  • 1/4 t cinnamon
  • 4 C milk
  • 4 slightly beaten egg yolks

Directions

  1. Cook meat and onion till browned, drain fat. Add tomatoes, tomato paste, salt, thyme. Simmer 30 minutes.

  2. Cook macaroni and drain. Stir in egg whites and cheese. Add meat mixture and put in 9X13 dish.

  3. Melt butter in large saucepan. Blend in flour, salt, cinnamon. Add milk. Cook and stir till thickened and bubbly. Remove from heat. Slowly stir warm sauce into yolks. Then mix all together. Pour over meat mixture, sprinkle with more cinnamon.

  4. Bake 375 for 35-40 minutes. Stand 10 min. before serving.
