Daigakuimo (Japanese sweet potatoes)

Ingredients

  • Japanese sweet potatoes (satsuma-imo)
  • 1/3 cup of sugar
  • 1 tsp. soy sauce
  • 2 tbsp. water
  • 1 tsp. sesame seeds
  • Vegetable oil

Directions

  1. Cut sweet potatoes into bite-sized pieces.

  2. Heat the oil, and fry the sweet potatoes until brown.

  3. Mix water, sugar and soy sauce in a pan.

  4. Heat over low heat until liquid turns sticky.

  5. Remove from heat, add sweet potatoes and toss.

  6. Sprinkle with sesame seeds.
