Ingredients
- 6 Tbsp olive oil
- 1 cup chopped onions
- 1 tsp chopped garlic
- 2/3 cup fresh parsley, chopped
- 1 cup chopped tomato
- 2 tsp tomato paste
- 8 oz. clam juice or chicken stock
- 2/3 cup dry white wine
- 1 1/2 lbs fish fillets, cut into 2 inch pieces
- Oregano, tabasco, thyme, pepper
Directions

Heat olive oil in pan, saute onions and garlic. Add parsley and cook 2 minutes, then add tomato, tomato paste, and cook 2 minutes longer.

Add clam juice, dry white wine, and fish and simmer until fish is cooked through. Add seasonings.
