Flourless chocolate cake

Ingredients

  • 5 oz. bittersweet chocolate, finely chopped
  • 5 oz. butter
  • 4 egg yolks
  • 4 egg whites
  • 1/2 cup sugar

Directions

  1. Preheat oven to 275ยบ

  2. Butter the bottom of an 8" springform pan. Line with a circle of parchment paper, butter parchment and sides of pan and dust with cocoa, tapping out excess.

  3. Melt chocolate and butter in a bowl set over simmering water.

  4. Whisk egg yolks and sugar in a large mixing bowl until well-blended.

  5. Whisk chocolate mixture into egg yolks.

  6. Whip egg whites to soft peaks and fold into egg yolk and chocolate mixture.

  7. Pour batter into prepared pan and bake until risen and set, about 1 hour.

  8. When cool, remove side of springform pan, invert cake onto serving platter and peel off parchment paper. Dust with confectioner’s sugar.
