Lemon Honey Chamomile Cookies

this evolved from someone giving me a package of Chamomile tea leaves. I didn’t like the tea, but it makes a really good, fragrant cookie.

Ingredients
- 2 3/4 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 5 chamomile tea bags or 4 Tbsp. loose leaf tea
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 1/2 tsp. vanilla extract
- Zest of 2 large lemons
- 2 Tbsp. fresh lemon juice
- 6 Tbsp. honey
- 1/2 cup sugar for rolling cookies ( may use colored sugars for festive decoration)
Directions
- Preheat oven to 350 degrees F.
- Put loose tea leaves in food processor, and process until it is very fine. Sift through a strainer to get rid of any large pieces that don’t grind.
- Combine the flour, baking soda, baking powder, finely ground tea, and salt in a medium bowl.
- In the bowl of an electric mixer, beat together butter and sugar until light and fluffy.
- Beat in egg, vanilla, lemon zest, lemon juice, and honey.
- Slowly add the dry ingredients, and mix until just combined.
- Drop teaspoon-sized balls of dough onto a parchment lined baking sheet about 1 inch apart. Bake 10- 12 minutes until lightly brown.

Variation: Try other herbal tea flavors instead of the chamomile tea- we like Raspberry tea.
