School Fudge

(from Lucianolinda’s recipe box)

adapted from the recipe used by my mother in the high school cafeteria 40 years ago. Much loved by all who remember it.

Serves 60 people

Ingredients

  • 4 cups sugar
  • 1 1/2 cups milk
  • 1 1/2 cups butter (2 1/4 sticks)
  • 1/2 cup cocoa
  • 2 tsp. vanilla
  • 1 cup peanut butter
  • 4 cups quick oats

Directions

  1. Boil sugar, milk, butter and cocoa 6 minutes ( soft ball stage), stirring constantly. Remove form heat, add vanilla extract and peanut butter, and mix well.
  2. Stir in oats and mix thoroughly. Pour into a buttered 10 × 15 × 1 baking sheet and let cool. Cut into 1 x2 inch pieces.
