Tomato & goat cheese open-faced sandwich

Ingredients

  • Marinated goat cheese
  • Olive oil in which cheese was marinated
  • Plum tomatoes, thinly sliced
  • Basil
  • French bread

Directions

  1. Slice bread.

  2. Spread with marinated goat cheese, and top with tomatoes.

  3. Sprinkle with fresh basil (or other herbs)

  4. Drizzle with the olive oil.

  5. Place under broiler until cheese starts to bubble and brown.
