Ingredients
- 1 -ready-made pie crust
- 3 Tbsp. butter, melted
- 1/2 cup pecans, chopped
- 1/3 cup brown sugar
- 1/4 cup corn syrup
- 2 eggs
- 1/4 cup semi-sweet or milk chocolate chips (opt.)
- 1/2 tsp. salt
Directions
- Preheat oven to 400 degrees. In large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs. Cook over med-low heat just until thickened.(consistency of pudding). Remove from heat, set aside. Roll out pie crust and cut in circles with 3 inch cookie cutter. Gently fold edges up about 1/8 to 1/4 inch. Spoon 1 Tbsp. pecan mixture on each circle.
- Place on parchment lined pan and bake 8 minutes or until filling is just set. Remove from oven and cool on wire rack. Melt chocolate chips (if desired) 15 seconds in microwave. Drizzle over cookies. Cool until set.
