Santa Fe Rice and Beans

Cook time: 30 minutes
Serves 4 people

Ingredients
- 1 cup frozen or 1 can of corn
- 1 can diced tomatoes w/ green chilis
- 1 can pinto or kidney beans
- 1 can black beans
- 2 cups cooked brown rice
- 3/4 c Mexican cheese blend, or cheddar
- 3/4 c light sour cream
- 3-5 scallions(green onions) or 1/2 onion chopped
- 1/4 t chili powder, salt and pepper

Preheat oven to 350

Mix all ingredients and place in 2 quart casserole. Sprinkle top with more cheese.

Bake for 30-45 minutes
