My turkey Jerk

Ingredients

  • 4 Tbsp. soy sauce
  • 1 tsp. lemon juice
  • 1 tsp. lime juice
  • 1 tsp. brown sugar
  • 1/2 tsp. coarse black pepper
  • 1/2 tsp. cayenne pepper
  • 1/4 tsp. allspice
  • 1/4 tsp. garlic powder

Directions

  1. Slice smoked turkey breast into 1 inch wide by 1/4 inch thick strips.
  2. Put all ingredients into a Ziploc bag, add turkey and mush bag to coat all. Refrigerate over night.
  3. Place turkey strips on an oven proof- rack over a baking sheet,(do not overlap) and bake in a 200 degree oven for about 2 hours, turning every 3o minutes or so.
  4. Remove from oven, place on rack of dehydrator and process for about 6 hours. Checking for dryness. it should be brittle, but not crumbly.
