Basic Beef jerky / or Sweet and Sour jerk

Ingredients
- Basic Recipe
- 4 Tbsp. soy sauce
- 4 Tbsp. Worcestershire sauce
- 1 Tbsp. tomato sauce or ketchup
- 1/4 tsp. coarse black pepper
- 2 cloves garlic (crushed)
- 1/2 tsp. salt
- 1 Tbsp. grated gingerroot
- Sweet and Sour jerk
- 1 tsp. salt 1/4 tsp. pepper
- 1/2 tsp. onion powder
- 1 garlic clove (crushed)
- 3 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 1/4 cup red wine vinegar
- 1/4 cup pineapple juice
Directions
- Using either set of marinade ingredients. In a small bowl, combine all ingredients. Mix well.
- Cut meat into strips about 1/4 inch thick on the bias. Place meat three or four layers deep in a container, spooning marinade over each layer. Cover tightly. Marinate in the refrigerator 6 to 12 hours, stirring occasionally.
- Shake off excess marinade, and place in dehydrator in a single layer, not touching, and process 12 hours, or until meat bends but doesn’t break.
