Pineapple Coconut Snowballs

Ingredients

  • 1 (8oz.) pkg. cream cheese, softened
  • 1 (8 oz.) can crushed pineapple, well drained
  • 2 1/2 cups flaked coconut

Directions

  1. When draining pineapple, use a fine strainer to push out as much juice as possible.
  2. Ina small bowl, beat cream cheese and pineapple. Mix well. Cover and refrigerate 30 minutes.
  3. Roll in one inch balls, then roll balls in coconut. Refrigerate for 6 hours or overnight.
