Ginger Plum Pork Medallions

Ingredients
- 1 pound pork tenderloin or 4 4 ounce pork medallions
- 1 Jalapeno pepper, seeded and finely chopped, divided
- 2 tablespoons honey
- 1 tablespoon peeled and grated ginger root
- 1 1/2 teaspoons sesame oil
- 2 fresh plums, pitted and diced
- 1 small green onion, finely sliced
- 2 tablespoons prepared plum sauce
Directions

Preheat grill to medium (300 to 350 degrees).

If using whole tenderloin, cut diagonally into 1/2 to 3/4 inch slices to form medallions.

Reserve 1/2 teaspoon of the chopped jalapeno for salsa.

Blend remaining jalapeno, honey, ginger and oil in small bowl.

Spread evenly on both sides of medallions.

Cover and refrigerate 5 minutes.

For salsa, combine plums, green onion, plum sauce, reserved 1/2 teaspoon jalapeno, and salt to taste in small bowl.

Toss to mix.

Cover and set aside.

Place pork medallions on grill.

Grill, covered 6 to 8 minutes or until pork is no longer pink in center turning once.

Serve with plum salsa
