Ingredients
- 1/4 cup granulated sugar
- 1/4 cup rice vinegar
- 1 tsp sesame oil
- 2 cucumbers, medium
- 1 red onion
- 1 lime, cut into wedges (optional)
- lettuce, cut into chiffonade (optional)
Directions

Combine sugar and vinegar in a small saucepan.

Heat over low flame until sugar is dissolved.

Remove from heat and stir in sesame oil.

Cut cucumbers lengthwise, seed, and cut cross-wise into thin slices.

Thinly slice the onion.

Toss cucumbers and onion together, and then toss with the sugar/vinegar/oil mixture.

Place cucumber/onion mixture on lettuce chiffonade and serve with lime wedge
