Ingredients
- Cooking spray
- 6 slices bacon, chopped
- 1 1/4 cup all-purpose flour
- 3/4 cup cornmeal
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. coarse salt
- 1/2 tsp. cayenne
- 3/4 cup milk
- 1/2 cup condensed Cheddar Cheese soup, undiluted
- 2 Tbsp. canola oil
- 1 large egg
- 2 green onions, finely chopped
- 3/4 cup shredded cheddar cheese
Directions
- Preheat oven to 350 degrees. Spray a 9 x5

inch loaf pan with cooking spray.
- In a medium skillet over medium heat, cook bacon until crisp, stirring occasionally, drain on paper towels.
- Whisk together flour, cornmeal, baking powder, baking soda, salt and cayenne in a large bowl.
- Whisk together milk, soup, oil and egg. Add soup mixture to flour mixture; stir until just incorporated. Fold in green onions, cheese and bacon. Scrape into prepared pan.
- Bake about 40 minutes, or until a wooden pick inserted near center comes out clean. Let cool on a wire rack 15 minutes; remove from pan.
