Chicken Tikka Masala

Ingredients

  • 1 pound boneless chicken, cut into 1 inch pieces
  • 2 Tbsp butter
  • 1 onion, chopped
  • 1 inch fresh ginger, grated
  • 3 tsp garlic
  • 1/2 tsp salt
  • 1/4 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp garam masala
  • 1/2 tsp cayenne
  • 1/2 cup water or chicken broth
  • 1 1/2 cups half-and-half
  • 1 cup crushed tomatoes or tomato sauce

Directions

  1. Fry chicken in butter until cooked through. remove chicken from pan and set aside. Add onions to pan and cook until soft.

  2. Pulp ginger and garlic together, add to onions and cook for a few minutes.

  3. Stir in powdered spices and cook for a few minutes.

  4. Add water or broth, warm through and then add half-and-half and crushed tomatos and heat through.

  5. Add the cooked chicken to the sauce and simmer low for about 10 minutes.
