Chicken and Veggies Stir Fry

Ingredients

  • 8 oz angel hair pasta, uncooked
  • 1 tablespoon canola oil
  • 1 pound chicken breast tenders, cut into bite-size pieces
  • 1 medium onion, cut into 8 wedges
  • 2 cups small broccoli florets
  • 1/2 cup sugar snap pea pods, strings removed
  • 1 cup chicken broth
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon lemon peel, grated
  • 4 teaspoons cornstarch
  • 1 1/2 teaspoons lemon pepper
  • 1 cup cherry tomatoes, cut in half

Directions

  1. Cook and drain pasta per package directions.

  2. In skillet, heat oil over medium-high heat. Add chicken and onion; cook and stir until chicken is brown.

  3. Add broccoli and pea pods. Cook until vegetables are crisp-tender; stir frequently.

  4. In small bowl, mix broth, thyme, lemon peel, cornstarch and lemon pepper; stir into chicken mixture. Cook over medium-high heat until sauce is thickened and vegetables are coated.

  5. Stir in tomatoes; cook until thoroughly heated. Serve over pasta.
