Ingredients
- 225 g/1 pkg Manicotti shells
- 375 g fresh spinach, boiled and finely chopped
- 1 egg, beaten
- 500 g Ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded Mozzarella cheese
- meat from 3 sausages/mild turkey italian
- 2 cloves garlic, chopped
- 1/4 cup fresh parsley
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp nutmeg
- 2 Tbsp breadcrumbs
- 24 oz can Tomato Sauce/tomato pesto
Directions

Boil shells per directions, drain, set aside

In large mixing bowl combine Ricotta, spinach and egg; stir

Continue stirring and add 1/4 cup of the Parmesan (half) and the rest of ingredients except for tomato sauce

Spread 1/2 cup of sauce over bottom of dish(es)

Fill shells with mixture and place in a single layer on sauce in dish

Cover with remaining sauce and sprinkle with remaining Parmesan (1/4 cup)

Cover and bake at 350 F for 30-45 minutes
