Loaded Baked Potato Casserole

Ingredients

  • 7-12 potatoes
  • 1 stick butter or margarine
  • Bacon
  • 1-2 packages shredded cheese of your choice
  • Sour Cream
  • Chives or green onions

Directions

  1. Clean and cut potatoes into bite-sized pieces to fill a casserole dish 3/4 full.

  2. Put cut potatoes in a pot with water and boil til tender. Meanwhile, fry the bacon til crips; drain and crumble.

  3. Place boiled potatoes in casserole dish. Slice pats of butter or margarine over the potatoes. Cover with cheese and bacon.

  4. Cover and refrigerate until ready to serve.

  5. Heat in the oven at 350 for 15-20 minutes or until cheese is melted and bubbly.

  6. Spoon sour cream over top, followed by chopped chives or green onions.
