Ingredients
- 1/2 cup ginger juice (see note)
- 1/2 cup apple cider vinegar
- 1/3 to 1/2 cup sugar
Directions
- Combine the ginger juice, vinegar and sugar in a bottle or jar. Shake to combine. Use immediately or refrigerate. Will keep refrigerated for 6 months to a year.

Note: Ginger juice is sometimes available bottled in the produce section at some grocery stores. To make your own, puree 2/3 pound roughly chopped fresh ginger with a tablespoon or two if water in a food processor, then press mixture through fine sieve or cheesecloth to extract the juice.
