Fail-safe Asian Salmon

Serves 6 people

Ingredients
- whole salmon fillet (about 1 kg)
- 4 T Dijon mustard
- 2 T hoisin sauce
- 2 T oyster sauce
- 2 T honey or maple syrup
- 2 T soy sauce
- 2 T dry sherry (or wine) optional
Directions

Place salmon in ovenproof dish, foil or paper-lined.

Spread mustard on fillet.

Mix remaining ingredients and brush salmon liberally with this.

Any remaining can be used to baste fish during cooking.

Place dish in oven, pre-heated to 180oC and bake approx 20 minutes, until salmon is just cooked.
