No-Meat Sloppy Joes

Ingredients
- 1 tsp. canola oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1/2 cup shredded carrots
- 3 cups cooked brown rice
- 2 (15 to 19 oz.) cans chili beans with sauce
- 3/4 cup hickory-smoked barbecue sauce
Directions
- Heat oil in a large skillet on medium-high. Add onion, green pepper and carrots; cook 3 to 4 minutes. Add rice, beans (with liquid) and barbecue sauce.
- Simmer 10 to 15 minutes or until heated through. Serve on hamburger buns.
