Avocado Pasta

Ingredients

  • 12 oz spaghetti
  • 2 ripe avocados, halved, seeded and peeled
  • 1/2 c fresh basil leaves
  • 2 cloves garlic
  • 2 T freshly squeezed lemon juice
  • Kosher salt & gr pepper to taste
  • 1/3 c olive oil
  • 1 c cherry tomatoes, halved
  • 1/2 c corn fresh, frozen or canned

Directions

  1. Large pot of boiling salted water, cook pasta according to package instructions, drain well

  2. To make sauce, combine avocados, basil, garlic and lemon juice in bowl of food processor

  3. season w/ salt and pepper

  4. With motor running add olive oil in slow stream until emulsified

  5. in large bowl combine all ingredients

  6. serve immediately
