Italian Wedding Soup

Ingredients

  • 1 Tbsp. olive
  • 2 leeks, well washed and diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 Tbsp. Mrs. Dash Garlic & herb Seasoning
  • 8 cups chicken broth
  • 1/2 Lb. 95% lean ground beef
  • 1/2 Tbsp. Mrs. Dash Italian Medley seasoning
  • 1/4 cup parsley, minced
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup small pasta such as orzo or stars
  • 1 cup kale, chopped
  • Parmesan cheese for garnishing

Directions

  1. In a large stockpot, heat the oil over medium-high heat. Add the leeks, carrot, celery and Mrs. Dash garlic & herb seasoning. Sauté until the vegetables begin to wilt, about 4 minutes. Add the chicken broth and bring to a boil. Reduce the heat to medium.

  2. meanwhile, make the meatballs by combining the ground beef, Mrs. Dash Italian Medley seasoning, parsley, egg and bread crumbs in a medium mixing bowl. Form the meat into quarter size balls ands drop into the flavored chicken broth. Heat for 10 minutes and then add the pasta and chopped kale and for another 10 minutes.

  3. Garnish with grated Parmesan cheese.
