Turnip Greens Soup

Ingredients

  • 1 (16 oz.) pkg. frozen turnip greens
  • 1 (16 oz.) can pinto beans, drained
  • 1 (16 oz.) can pinto beans, drained
  • 1 (10 oz.) can Ro-Tel tomatoes and peppers
  • 1 pkg. Knorr vegetable soup mix
  • 4 cups chicken broth
  • 3/4 Lb. smoked sausage, cut into discs and
  • halved again
  • Cornbread for serving

Directions

  1. Add turnip greens, beans, Ro-Tel, soup mix. chicken broth and sausage to a slow cooker. Cook on high for 1 hour, then set to low and cook 3 hours more.
  2. If you prefer to use a Dutch oven, bring the mixture to a boil, then reduce heat and simmer for at least 40 minutes.
  3. Serve with cornbread.
