Avocado with poppy seed dressing rice cakes

Ingredients

  • 2 tbsp sunflower oil
  • 2 tsp balsamic vinegar
  • 1/2 tsp runny honey
  • 1 tsp toasted poppy seeds
  • 1 ripe avocado, halved, stoned and peeled
  • 4 rice cakes or crackers

Directions

  1. Whisk the oil, vinegar, honey and poppy seeds. Season to taste. Cut the avocado into wedges, arrange on top of the crackers and drizzle over the dressing. Keep any leftover dressing in a jar in the fridge.
