White Bean & Chicken Chilli

Ingredients

  • 3 cans (15 oz. each) white kidney or
  • cannellini beans
  • 3 tsp. chicken bouillon granules
  • 3 tsp. ground cumin
  • 2 cups water
  • 3 cups cubed cooked chicken or turkey
  • Minced fresh cilantro, optional

Directions

  1. Rinse and drain 1 can of beans. Place in a large saucepan; mash slightly. Rinse and drain remaining cans of beans; add to mashed beans.

  2. Stir in bouillon, cumin and water; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes to allow flavors to blend, stirring occasionally.

  3. Stir in chicken; heat through. If desired, sprinkle with cilantro.

  4. May substitute turkey for the chicken if desired.
