Ingredients
- Crust
- 1/4 cup unsalted butter, room temperature
- 2 tablespoons sugar
- 3/4 cup flour
- 1/4 cup sweetened coconut
- pinch salt
- CURD
- 2 whole eggs
- 2 egg whites
- 3/4 cup sugar
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1/2 cup flour
- powdered sugar (to garnish)
Directions

Preheat oven to 350 degrees.

Coat 8×8 pan with non-stick cooking spray. Cut two pieces of parchment long enough to hang off the sides of the baking dish. This will be used as handles to later remove the bars. Spray the parchment paper fitted inside the pan with baking spray.

In a bowl of a standing mixer, whip butter and sugar until combined.

Add coconut, flour and salt.

Mix to combine and until it forms a dough.

Press dough into pan with floured hands. Bake for 15 minutes.

Remove and let cool.

Meanwhile prepare the lemon curd.

In a large bowl whisk together all ingredients. Pour over prepared crust and bake for 15 more minutes.

Remove from oven and allow to cool before slicing.

Serve with a sprinkle of powdered sugar.
