Ingredients
- 2 Tbsp soy sauce
- 2 limes, juice and zest
- 1 Tsp sugar
- 1/4 Cup olive oil
- 6 Pieces pork tenderloin (4 oz. each, pounded to 1/4-inch thickness, cut into thin strips)
- Kosher salt and freshly ground black pepper
- 4 Cups broccoli florets (about 1 head)
- 1/2 Cup crushed peanuts
- 1/4 Cup fresh cilantro leaves
Directions

Preheat a large sautee pan or wok over medium-high heat.

Add the olive oil to the preheated pan.

Slice each piece of pork into 3 strips.

Season both sides of the pork with salt and black pepper.

Arrange all pork in the pan and cook until golden brown, about 2 minutes.

Flip the pork and scoot the pieces to one side of the pan.

Add the broccoli, peanuts and a pinch of salt to the empty space and cook for 1 minute. Add the soy sauce, lime juice and zest, and sugar to the pan.

Add 1/2 a cup of water and deglaze the pan, scraping with a wooden spoon to get up the browned bits on the bottom of the pan.

Cook until slightly reduced about 30 seconds.

Remove from the heat and stir in the cilantro. Taste and adjust the seasoning, adding salt and black pepper as needed.

Serve immediately.
