Ingredients
- 4 cloves garlic, chopped
- 1 small onion, sliced
- 2 carrots
- 1 small sweet red pepper, julienned
- 1 Tbsp. oil
- 1 lb. thinly sliced boneless pork chops
- 1 (14.5 oz.) can chicken broth
- 1/3 cup bottled fish sauce
- 3 Tbsp. chopped peanuts
- 3 Tbsp. brown sugar
- 4 oz. rice noodles, broken in half
- 1 Tbsp. cornstarch
- 1/4 cup water
Directions
- Sauté garlic, red onion, carrots and sweet red pepper in oil in non-stick skillet over high heat 5 minutes.
- Add thinly sliced boneless pork chops; cook 3 minutes.
- Add chicken broth, fish sauce, peanuts and brown sugar.
- Add rice noodles, broken in half (submerge in liquid); cover; cook over low heat 6 minutes. Stir in cornstarch mixed in water; cook until thickened.
