Pizza Rustica

Ingredients
- 1 (9-inch) unbaked pie crust, refrigerated or
- homemade
- 3 eggs
- 14 to 16 oz. ricotta cheese
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 clove garlic, minced
- Pinch crushed red pepper flakes
- 3 Tbsp. chopped fresh basil
- 2 1/4 cups shredded mozzarella cheese,
- divided use
- 1 cup thick pizza sauce
- Desired pizza toppings such as:
- 1 small red or yellow bell pepper, very
- thinly sliced
- 1/3 to 1/2 red onion, thinly sliced
- sliced pitted olives
Directions
- Heat oven to 400 degrees.
- Line a deep, 9-inch pie plate with the pie crust. Set aside.
- In a mixing bowl, beat the salt, pepper, garlic, red pepper, basil and 2 cups mozzarella. Transfer mixture to pie crust, smoothing filling with the back of a large spoon. Spread pizza sauce evenly over the cheese mixture. Arrange desired toppings over sauce. Bake 30 minutes at 400 degrees. Remove pie from oven. Reduce temperature to 375 degrees and bake 30 minutes more. Let cool 10 minutes before slicing and serving.
