Tortilla Bake

Ingredients

  • 5 corn tortillas (6-inch diameter), cut in
  • quarters
  • 6 oz. chorizo or pork sausage
  • 1 small onion, chopped (1/4 cup)
  • 3 eggs
  • 2 cups milk
  • 1/4 tsp. salt
  • 4 oz. sharp cheddar cheese, shredded (1 cup)
  • 1 can (8oz.) whole kernel corn, drained
  • 1/4 cup seeded, chopped, canned green
  • chilies

Directions

  1. Grease a 1 1/2 quart shallow baking dish. Line quartered tortillas on bottom and sides of dish.

  2. Remove casing form chorizos or sausage. Brown with onion in a small skillet; pour off fat.

  3. Beat eggs in a medium-size bowl. Add milk, salt, cheese, corn and chilies. Stir in cooked, drained chorizo. Spoon egg mixture into tortilla-lined dish.

  4. Bake in a moderate oven (350 degrees) for 30 minutes, or until firm in center.
