Ingredients
- 2 1/2 lb. veal, knuckle or shin
- 1/4 lb. salt pork
- 2 tsp. salt
- 1 tsp. chopped onion
- 1 cup cracker crumbs
- 1 cup water or stock
- 1 egg
- 1/2 tsp. sage
- 2 Tbsp. butter
- 1 sm. mushroom caps.
Directions
- Chop veal and pork very fine and add salt, onion, crumbs, 1/2 cup water, the egg and sage. Mix well together.
- Pack into greased pan and cook in moderate oven (350 degrees) 2 1/2 hours, basting occasionally with remainder of water combined with butter. Garnish top of loaf with broiled or sautéed mushroom caps.
