Ingredients
- 2 cups frozen hash brown potatoes, thawed
- 1 Pkg. (10 oz.) frozen chopped spinach,
- thawed and drained
- 1 tsp. salt
- 1 lb. ground beef
- 1 medium onion, finely chopped
- 1 cup fine soft bread crumbs
- 1/4 cup oats or wheat germ
- 1/2 cup water
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 eggs, beaten
Directions
- Preheat oven to 350 degrees.
- In a bowl, combine thawed hash brown potatoes, thawed and drained shopped spinach, and 1 tsp. salt.
- In a second bowl, combine ground beef with finely chopped onion, breadcrumbs, oats, water, salt and pepper. Mix lightly but well.
- Spoon half meat mixture into greased loaf pan (9×5×3 inches). Cover with potato and spinach mixture. Pour on beaten eggs and top with remaining meat.
- Bake in preheated oven for 1 hour. Drain off any excess fat, loosen loaf by running a spatula around edge and turn out on platter.
