Vitameat Loaf

Ingredients

  • 2 cups frozen hash brown potatoes, thawed
  • 1 Pkg. (10 oz.) frozen chopped spinach,
  • thawed and drained
  • 1 tsp. salt
  • 1 lb. ground beef
  • 1 medium onion, finely chopped
  • 1 cup fine soft bread crumbs
  • 1/4 cup oats or wheat germ
  • 1/2 cup water
  • 1 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 eggs, beaten

Directions

  1. Preheat oven to 350 degrees.
  2. In a bowl, combine thawed hash brown potatoes, thawed and drained shopped spinach, and 1 tsp. salt.
  3. In a second bowl, combine ground beef with finely chopped onion, breadcrumbs, oats, water, salt and pepper. Mix lightly but well.
  4. Spoon half meat mixture into greased loaf pan (9×5×3 inches). Cover with potato and spinach mixture. Pour on beaten eggs and top with remaining meat.
  5. Bake in preheated oven for 1 hour. Drain off any excess fat, loosen loaf by running a spatula around edge and turn out on platter.
