Orange Cranberry Rice

Ingredients
- 4 cups water
- Finely grated rind and juice from 1 orange
- 1/2 cup dried cranberries
- 2 Tbsp. butter
- 1 tsp. coarse salt
- 2 cups basmati rice
- 3 green onions, thinly sliced
Directions

Preheat oven to 375 degrees.

Combine water, orange rind, orange juice, dried cranberries, butter and salt in an ovenproof saucepan with a lid. Bring to a boil. Add rice and stir once. Cover and place in oven. Bake 20 minutes. Sprinkle with green onions.
