Chewy Coconut Granola Bars

Ingredients
- Cooking spray
- 2/3 cup PLUS 2 tsp. all-purpose flour, divided
- 1/3 cup whole-wheat flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2/3 cup packed brown sugar
- 1/4 cup vegetable oil
- 2 Tbsp. skim milk
- 2 eggs
- 1 1/2 cups whole-grain granola such as Bear
- Naked
- 3/4 cup chopped dried mixed tropical fruit
- 1/2 cup unsweetened flaked coconut
Directions
- Heat oven to 350 degrees.
- Coat a 13×9-inch baking pan with cooking spray. Dust with 2 tsp. all-purpose flour; set aside.
- In a small bowl, combine the remaining all-purpose flour, the whole-wheat flour, baking powder and salt. Stir with a whisk to evenly distribute the baking powder.
- In a large bowl, beat sugar, oil, milk, and eggs with an electric mixer on high until smooth. Add flour, beating on low until blended. Fold in granola and fruit. Pour batter into prepared pan. Sprinkle with coconut.
- Bake 20 minutes or until golden. Cool completely in pan on a wire rack, Cut into bars.
