Low Carb Green Bean Casserole

Ingredients
- 1 lb fresh green beans (cleaned, trimmed, and halved) OR frozen cut green beans
- 8 oz mushrooms, roughly chopped
- 2 tbsp butter
- 3 tsp minced garlic
- 1/2 cup chicken stock or broth
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese (grated)
- 3 oz french fried onions
Directions

In a large pot, blanch green beans then shock them in an ice bath; drain and set aside

In a skillet over medium heat, saute mushrooms and garlic in butter for 5 min

Add chicken stock and heavy cream; bring to a boil over medium heat then reduce to low and simmer until thickened slightly

Stir in Parmesan cheese; add green beans and stir until coated

Transfer to a greased casserole dish and top with french fried onions

Bake at 400F for 15 min
