Mediterranean Shrimp

Ingredients

  • 8 oz. orzo pasta
  • 1 Tbsp. olive oil
  • 1 medium red onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 medium fresh zucchini, thinly sliced
  • 1 lb. medium shrimp, shelled and deveined
  • 1/4 cup chopped fresh dill
  • 1/4 tsp. ground black pepper
  • 3 oz. crumbled feta cheese
  • 1/4 cup sliced black olives

Directions

  1. Cook orzo pasta according to directions. Meanwhile, heat oil in large skillet over medium. Add onion and bell pepper. Cook 4 minutes or until softened. Stir in zucchini and cook 2 minutes or until almost tender. Stir in shrimp, dill and black pepper. Cover and cook 2 to 3 minutes or until shrimp are opaque. Spoon over orzo, sprinkle with cheese and olives, and serve.
