Black Beans and Rice

Ingredients

  • 1 Tbsp. olive oil
  • 1 medium onion, chopped
  • 2 small fresh jalapeno peppers, seeded and
  • chopped
  • 1 Tbsp. minced garlic
  • 2 (15 oz.) cans black beans in seasoned sauce
  • 1 large tomato, chopped
  • 1/4 cup picante sauce
  • 4 cups hot cooked brown rice

Directions

  1. Heat oil in a large skillet on medium. Add onion, peppers, and garlic; cook 5 minutes or until onion is softened. Stir in beans with sauce, tomato and picante sauce. Cover and cook 8 minutes or until heated through. Serve over rice.
