Black Beans and Rice

Ingredients
- 1 Tbsp. olive oil
- 1 medium onion, chopped
- 2 small fresh jalapeno peppers, seeded and
- chopped
- 1 Tbsp. minced garlic
- 2 (15 oz.) cans black beans in seasoned sauce
- 1 large tomato, chopped
- 1/4 cup picante sauce
- 4 cups hot cooked brown rice
Directions
- Heat oil in a large skillet on medium. Add onion, peppers, and garlic; cook 5 minutes or until onion is softened. Stir in beans with sauce, tomato and picante sauce. Cover and cook 8 minutes or until heated through. Serve over rice.
