Pork Roast with Herb Rub

Ingredients
- 2 Tbsp. sugar
- 2 tsp. dried marjoram
- 2 tsp. rubbed sage
- 1 tsp. salt
- 1/2 tsp. celery seed
- 1/2 tsp. ground mustard
- 1/8 tsp. pepper
- 1 boneless pork loin roast (4 lb.)

In a bowl, mix sugar, marjoram, sage, salt, celery seed, ground mustard and pepper; rub over roast. Refrigerate for at least 4 hours.

Preheat oven to 350 degrees. Place roast on a rack in a shallow roasting pan, fat side up. Roast 1 1/4 to 1 3/4 hours or until a thermometer reads 145 degrees.

Remove the roast from oven and tent with foil. Let stand 15 minutes before slicing.
