Ingredients
- 1 large potato, cut into 2-inch chunks
- 1/2 lb cod fillets
- 2 tbsp Parmesan
- 1 egg, lightly beaten
- 1 tsp chopped parsley
- 1 egg, lightly beaten
- 1 cup bread crumbs
- 2 tbsp canola oil
Directions

Place potato in a pot; add water to cover by 2 inches.

Put on lid, cook 20 minutes on medium-high or until tender.

Lift out potatoes and mash in a bowl.

Add cod to the pot, cook 5 minutes and strain water.

Gently break up cod.

Add to potatoes in bowl along with Parmesan, 1 egg and parsley. Mix gently to combine.

Form mixture into 16 patties.

Dip into another beaten egg and then into bread crumbs.

Heat 2 bsp canola oil in a large pan on medium.

Cook cakes for 4 minutes on each sie of until golden.
