Cod Cakes

Ingredients

  • 1 large potato, cut into 2-inch chunks
  • 1/2 lb cod fillets
  • 2 tbsp Parmesan
  • 1 egg, lightly beaten
  • 1 tsp chopped parsley
  • 1 egg, lightly beaten
  • 1 cup bread crumbs
  • 2 tbsp canola oil

Directions

  1. Place potato in a pot; add water to cover by 2 inches.

  2. Put on lid, cook 20 minutes on medium-high or until tender.

  3. Lift out potatoes and mash in a bowl.

  4. Add cod to the pot, cook 5 minutes and strain water.

  5. Gently break up cod.

  6. Add to potatoes in bowl along with Parmesan, 1 egg and parsley. Mix gently to combine.

  7. Form mixture into 16 patties.

  8. Dip into another beaten egg and then into bread crumbs.

  9. Heat 2 bsp canola oil in a large pan on medium.

  10. Cook cakes for 4 minutes on each sie of until golden.
