Super-Simple Paella

Ingredients

  • 2 links chicken sausage (6 ounces)
  • 1 tbsp canola oil
  • 1 red pepper
  • 1 small onion
  • 1/2 tsp ground turmeric
  • 1.5 cups cooked brown rice
  • 1/4 cup chicken broth
  • 8 ounces cooked, peeled shrimp

Directions

  1. Cut sausage in half lengthwise and slice into pieces.

  2. Heat canol oil in a large skillet on medium-high and cook until browned, about 2 minutes.

  3. Chope the red pepper and the onion and add to pan with turmeric and salt.

  4. Cook, uncovered until tender, 4 minutes, stirring occasionally.

  5. Stir in rice, broth and shrimp. Cook for 2 minutes more to heat through.
