Sponge Cake with Orange Icing

Ingredients
- 1 1/4 c cake flour
- 1 c sugar
- 1/2 t baking powder
- 1/2 t salt
- 6 eggs separated
- 1 t cream of tartar
- 1/2 c sugar
- 1/4 c cold water
- 1 t vanilla
- Icing
- Butter-size of one large egg
- 1 box powdered sugar
- 1 orange, juice and rind
Directions
- Sift together first 4 ingredients. Set aside.
- Beat egg whites, sugar, and cream of tartar together until stiff.
- Beat egg yolks, water, vanilla with dry ingredients for one minute. Fold in egg whites.
- Pour into 9 or 10 inch cake pan.
- Bake at 350F for 40-50 minutes.
- Combine butter, powdered sugar, orange juice and rind of orange. Stir until smooth.
- Cool cake completely before icing.
