Ingredients
- 1 Tbsp. vegetable oil
- 1 medium-size onion, chopped
- 2 scallions, chopped
- 2 garlic cloves, minced
- 2 medium-size carrots, diced
- 1 rib celery, diced
- 1 small green bell pepper, seeded, diced
- 2 lg. eggs whites
- 1/2 tsp. salt (opt.)
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 1/2 cup ketchup
- 1/2 cup skim milk
- 2 lb. ground turkey
- 3/4 cup dry bread crumbs
Directions
- In a medium-size nonstick skillet, heat oil; add onions, scallions, garlic, carrots, celery and bell pepper. Sauté about 5 minutes

Let vegetable mixture cool.
- Heat oven to 350 degrees.
- In a large bowl, combine egg whites, salt (if desired), black and cayenne peppers, 1/4 cup ketchup and milk; using whisk or fork, beat until blended.
- To egg mixture, add turkey, crumbs and cooked vegetables; using a wooden spoon, or hands, mix ingredients together just until uniform. Lightly pack mixture into 9×5×3 inch loaf pan, slightly rounding top. Pour remaining ketchup over top. Bake 50 minutes; let stand 15 minutes before slicing.
